Baked Eggs in Bacon Cups with Avocado Mash

A combination of laziness and the desire for something different with my bacon and eggs, I gave something a go I saw on one of my favourite shows… come dine with me…

Though I think I did a much better job…

This is quick and easy to prepare and requires minimal effort…

For the egg and bacon cups you will need:

  • silicon muffin tray
  • one egg per cup (this will depend on how many you want obviously
  • enough bacon to line each cup you want to use.

Avocado mash:

  • one avocado (mashed)
  • 1 tomato (diced)
  • 1/4 onion (finely diced)
  • salt and pepper to taste


Preheat your oven to about 180 degreesĀ Celsius. Line the muffin cups with your bacon and crack one egg into each cup. Add a little pepper on top to taste. Pop into the oven for around 25 – 30 minutes, or until solid all the way through.

For the avocado mash, add all ingredients and mix together.

Once done serve it all up on your plate…

Tasted really good – be careful with the salt on the eggs and bacon though as the saltiness of the bacon seeps through.

      They were. I was concerned the bacon would be dry but it was great.

    This sounds so good that i wish i could have some right now but i just ate dinner. (oops) Trying not to drool…
