Dark Choc Rasberry Muffins

I know what you’re thinking… chocoloate? muffins? Paleo? this cannot be!!!

Well let me tell YOU… this is my new favourite go to sweet thing now I have finally made it… They taste just like muffins, they take like 10 minutes to prepare IF that and then about 20 minutes to cook.

So the measurements that were in the recipe were pretty low and and made 5 muffins… I used one of those silicon muffin trays… largeish size… SOOO obviously depending on the size of your muffin moulds and how many you want you can double, triple or even QUADRUPLE your measurements…

You will need:

  • 1/4 cup coconut flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 3 eggs
  • 2 tbsp butter – melted/clarified
  • 1 tsp vanilla extract
  • 3 tbsp honey
  • 1/2 cup rasberries (or blueberries/cranberries – whatever your choice)
  • 1/2 cup dark choc chips (YUM)

Method:

Preheat your oven to approx 180C (350F). In a large bowl combine coconut flour, salt, baking powder and cinnamon. In a separate bowl mix the eggs, butter, vanilla and honey until everything is blended through. Slowly pour the wet ingredients into the dry ingredients stirring as you go until a smooth batter has formed. Next stir in your berries and choc chips and divide your mixture into your baking dish. If not silicon ensure properly greased. Pop into the oven for approximately 20 minutes.

When done, remove and leave to cool… OR if like me you LOVE the taste of melting chocolate, devour then and THERE!!!
