Salmon with Olive Gramolata and Vegetables

I’m not the biggest fan of fish, so I always need some kind of condiment to go with it.  Steering away from cream based sauces or herb butters, I decided to try making an olive gramolata to go with some salmon fillets I bought.  It turned out to be a fine match…

You’ll need:

  • Salmon fillets
  • Pitted green olives (around 100g)
  • 2 cloves of garlic
  • 1 bunch flat-leaf parsley
  • Grated zest of 1 lemon
  • Juice of 1 lemon
  • Good quality olive oil
  • 1 large sweet potato
  • 1 bunch of asparagus, trimmed
  • 4 spring onions (scallions), sliced into 3-4cm pieces
  • 1 bag (approx 200g) baby spinach leaves
  • 1 red capsicum

What to do:

  1. Heat the oven to 200 degrees celsius
  2. Peel and slice the sweet potato into rounds
  3. Add the sweet potato slices to a bowl with a splash of grapeseed oil, toss through
  4. Line a baking sheet with greaseproof paper and lay the sweet potato slices out on it
  5. Place in the oven to cook
  6. Meanwhile, prepare the gramolata by chopping the parsley very finely and adding to a bowl
  7. Chop the garlic and olives as equally finely and add these to the parsley
  8. Grate in the zest of 1 lemon and squeeze the juice from half of it into the mixture
  9. Combine the gramolata ingredients and then add a decent amount of olive oil (probably around 1/4 cup), season with cracked pepper and stir well
  10. De-seed and slice the capsicum into large, rough chunks and add to the tray of sweet potato after around 15 mins of the potato being in the oven on its own
  11. To a small saucepan, squeeze the juice from the remaining lemon half and set the heat to low
  12. Add the asparagus, spring onions and spinach and cover
  13. Heat a small amount of oil in a frying pan over high
  14. Add the salmon fillets (skin side down if skin-on) for approximately 3-4 mins
  15. Whilst the salmon is cooking, check that the vegetables in the oven aren’t burning and stir the other vegetables on the stove-top
  16. Turn the salmon fillets and cook for another 3-4 mins until done
  17. Plate up, topping the salmon fillets with a generous dollop of gramolata.  Enjoy.

    Yum. Yum. Yum. Yum. Yum… Yes, I could say that for days as SALMON is my favorite food on this planet! ha ha. I must come over for dinner. LOL
