Pork with Mushroom and Pine Nut Salad


I recently had a desire for something with pine nuts in and well this is the result… now I will be completely honest… I bought a pre-marinated/pre-packed pork roast thing from woolworths… and it tasted amazing…

The mushroom salad however, I made from scratch and I found the recipe on the Taste website…

The salad tasted delish and was quick, simple and easy to make… and makes enough leftovers for lunch the next day.

You will need:

  • 1/2 cup pine nuts
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 3 teaspoons wholegrain mustard
  • 500g button mushrooms, thinly sliced
  • 2 tablespoons chopped chives
  • 150g mixed baby Asian salad green




  1. Place nuts into a non-stick frying pan. Cook over medium heat, stirring, for 3 minutes or until golden. Transfer to a plate.
  2. Add oil, vinegar and mustard to frying pan. Cook over medium-high heat, stirring, for 2 minutes or until bubbling. Add mushrooms. Toss over high heat to coat with oil mixture. Remove to a bowl.
  3. Add nuts and chives to mushrooms. Toss to combine. Arrange salad, mush-rooms on a plate with your pork on the side. Season with salt and pepper.

Obviously if you are not feeling lazy you can cook a delicious pork roast to go with the salad – going to depend on your mood and time I suppose.
