Chicken Fajitas

One of those meals that I always felt was a guilty pleasure and LOVED every mouthful of was Fajitas… loading up with sour cream and guacamole and having the meaty juices dribble down my face…. AMAZING… The tortillas always filled me right up though and I felt bloated and sicky afterwards… but I still loved every juicy, meaty mouthful… DELISH…

For lunch yesterday we went with a paleo option which basically meant no tortillas and no sour cream…

Unfortunately the ridiculously over priced avocado we bought from David Jones grocer wasn’t ripe yet so this also meant no guacamole… though this wasn’t really an issue.

Instead of tortillas we used baby cos lettuce and it was amazing… For those of you that love Fajitas, dig in… these were great.

What you’ll need

  • As much chicken as you want to eat – I used about 500g of chicken tenderloins – saves on cutting
  • 1 red pepper
  • 1 Spanish onion
  • 1 head of baby cos lettuce
  • 1tsp Onion Powder
  • 1tsp Garlic Powder
  • 1tsp Paprika
  • 1tsp Dried Thyme
  • 1tsp Dried Oregano
  • 1/2tsp Cayenne Pepper
  • 2tsp Sea Salt
  • Good splosh of olive oil (approx 2 table spoons)

Method

For the seasoning you want to combine all the spices, salt and olive oil into a bowl and mix well until all is blended well. Next add the chicken to the spice and give it a good mix up with your hands…

Cut your onion into small wedges… splosh in a little olive oil into your fry pan and throw in the onions and let them begin to cook through. Lay the chicken over the onion and let it cook through till you can see the sides start to cook. Turn the chicken when the sides start to whiten. Slice your red pepper thinly and throw over the top. Put a lit on your pan and leave it till it’s cooked through.

Once ready and cooked… pull all your lettuce leaves apart and place in a bowl. put all on the table and spoon some of the pepper and onions onto the lettuce leaves and top with a chicken tenderloin…

If you were smart and bought an avocado – mash that all up and slop that on top as well… SOOOO GOOOD
