Pork with Pineapple Salsa & Green Beans

An easy one tonight using two of my favourite ingredients… Pork and pineapple.

This should take around 15 minutes to get on the plate.  Mighty good when you’re not in the mood for spending too much time in the kitchen.


  • pork loin chops
  • 1 fresh pineapple, cut into smallish chunks
  • 1 lime
  • 1 red capsicum, diced
  • a handful of roughly chopped coriander
  • couple of handfuls of green beans
  • half a red onion, diced
  • pinch or so of dried rosemary
  • pinch of so of dried parsley
  • sprinkling of garlic salt
  • grapeseed oil


  1. Combine the pineapple, juice of the lime, coriander, capsicum, and onion in a bowl.  Salsa is done.  You could add a diced red chilli or jalepenos if you like, but I wasn’t in the mood for heat tonight.
  2. Season the pork chops with the rosemary, garlic salt, and parsley.  splash a tiny bit of grapeseed oil on each and then add them to a hot griddle pan and let them sizzle away.  I don’t time my cooking, so I turn them when I think they’re done, usually after about 4 or so minutes, I guess.
  3. Meanwhile, bring a small pan of water to the boil and throw in the beans for 2 or 3 minutes until cooked but still crunchy.
  4. Once all is cooked, serve up.  It’s as simple as that!
